MEET THE TEAM
We have a small team but with experience in several fine dining establishments both in the UK and France. This allows us to provide good service and consistent food that has a French influence but uses fresh produce sourced locally where ever possible. Take our cheese board, Flat Capper and St Helens Goats are just 2 of the selections from our board.
Our signature dish - the Duo of Hogget, which is actually a trio, has been given a little rest but it's replacement is a duo of Venison. (Hogget is a sheep between 1 & 2 yrs of age). Paul designed the dish to sum up Shipley. Give it a try as the temperature starts to drop.

Paul H - HEAD CHEF
After training at catering college, Paul moved south to gain experience under Marco Pierre White at The Criterion. This gave a great grounding in a fine dining environment and started a journey across the channel to Paris and the Le Jules Verne restaurant in the Eiffel Tower with a secondment to Le Louis XV in Monaco. A passion for using fresh local produce drives Paul to deliver consistent meals to diners at a standard that sets a high bar. Feedback from customers suggest this is being achieved.
Paul is also available for consultancy on menu planning for dinner parties or other restaurants.
